About the Recipe

The Lunchbox Berry Taco Pikelets recipe is a fun, quick-to-prepare treat, perfect for lunchboxes or snacks. With a prep time of 15 minutes and a cook time of 4 minutes, it's great for busy schedules. The recipe uses ready-made pikelets, which are lightly toasted, rolled, and folded into taco shapes. They're then filled with creamy, honey-whipped ricotta and topped with fresh berries. You can also switch out the ricotta and honey for other fillings like Nutella, peanut butter, or cream cheese.

Ingredients

  • 8 Readymade pikelets

  • 200g Fresh ricotta

  • 1 tbs honey

  • 125g Blueberries or Raspberries

  • 250g Strawberries, hulled, thickly sliced

Preparation

Method:

  1. Lightly toast 4 pikelets, they should feel crisp on the surface. Remove to a board. Roll over the surface with a rolling pin, while warm to flatten slightly then fold them in half. Turn a muffin pan upside down and place the pikelets in the space between the holes to cool. Repeat with the remaining 4 pikelets.

  2. Whip the ricotta and honey with a hand mixer until creamy. Spoon into the pikelet tacos. Fill with berries and serve. 


Tips:

  • You can switch the ricotta and honey for Nutella, peanut butter, cream cheese, cottage cheese or biscoff
