The mangoes are peeled, chopped, and blended with lime juice to create a smooth mixture that forms the base of this tropical cocktail. This mixture is then stirred with rum and chilled until ready to serve. The cocktail is poured over crushed ice in tall glasses, topped with ginger beer, and given a splash of grenadine for a dash of color and extra fruity flavor. A squeeze of fresh lime juice and garnish of thinly sliced mango finish off this vibrant drink. With a prep time of just 15 minutes, this cocktail is perfect for summer get-togethers or a relaxing weekend treat.
Ingredients
3 Mangoes
4 Large Limes, juiced
200mL Coconut white rum, chilled
3 x 375mL Bottles ginger beer, chilled
Grenadine
Mango, thinly sliced, lime wedges and crushed ice, to serve
Preparation
Peel and chop the mangoes. Place the mangoes and 100mL lime juice into a blender. Blend until smooth. Pour into a jug or carafe. Stir in the rum and refrigerate until ready to serve.
Spoon ice into 6 tall glasses. Pour ½ cup mango mixture into each glass. Top up with Ginger beer. Add a splash of grenadine and a squeeze of lime. Garnish with mango to serve.
