The Qukes, Tuna and Heirloom Tomato Cheesy Tortilla is a quick and delightful dish that combines the crispness of Qukes cucumbers, the sweetness of heirloom tomatoes, and the richness of tuna. The tortillas are layered with a generous portion of tasty cheese, lightly sprayed with olive oil, and pan-fried until golden. The dish is then topped with a creamy blend of crème fraiche, horseradish cream, and chives, followed by chunks of tuna, cucumber slices, tomato halves, and diced avocado. Finished with a sprinkle of chives and a squeeze of lime, this dish offers a variety of textures and flavours in each bite. With a prep and cook time of just 10 minutes, it's perfect for a quick and satisfying meal.

Ingredients

  • 250g Qukes Cucumbers, thickly sliced

  • 200g Heirloom Tomatoes, halved

  • 8 Flour Tortillas

  • 2 Cups grated tasty cheese

  • Olive Oil cooking spray

  • 200ml Carton Crème fraiche or light sour cream

  • 1 tbs horseradish cream

  • 3 tbs chopped chives

  • 425g can tuna, drained

  • 1 small avocado, diced

  • Lime wedge, to serve

Preparation

Method:

  1. Place 4 tortillas on the work bench. Sprinkle with cheese and sandwhich together with a second tortilla. Spray both sides of the tortillas lightly with oil. Heat a non-stick frying pan over medium heat until hot. Add one tortilla. Cook for 1-2 minutes on each side or until light golden. Remove to a board and repeat with remaining tortillas.

  2. Combine the crème fraiche, horseradish cream and half the shives. Season. Spoon over one side of the cheesy filled tortilla. Break the tuna into chunks and arrange over each tortilla. 

  3. Top with qukes baby cucumbers, heirloom tomatoes and diced avocado. Sprinkle with remaining chives. Serve with lime.
