About the Recipe

The Strawberry and Haloumi Salad is a quick, flavourful dish, blending sweet strawberries with salty haloumi. With just 10 minutes of prep and 3 minutes of cook time, it's an ideal light lunch or side. It combines baby spinach, basil, cucumbers, avocado, strawberries, and pan-fried haloumi, topped with olive oil and lime. You can also swap strawberries with other berries for variation.

Ingredients

  • 40g Baby Spinach, rocket or salad leaves

  • ¼ cup basil leaves

  • 6 Baby quke cucumbers, thinly slices lengthways

  • 1 Avocado, quartered, sliced

  • 250g Strawberries, washed, hulled, halved

  • 2 tbs olive oil

  • 125g haloumi, coarsely crumbled

  • 1 lime, halved

Preparation

Method:

  1. Combine the lettuce and basil on a plate. Top with qukes, avocado and strawberries

  2. Heat 1 tablespoon of the oil in a non-stick frying pan over medium-heat. Add the haloumi and cook, 3-4 minutes, stirring occasionally until golden. Spoon the warm haloumi over the strawberries. Drizzle with remaining olive oil and squeeze of lime.


Tip:

  • You can switch the strawberries with raspberries, blueberries or blackberries.
