The watermelon is cubed and mixed with thickly sliced Qukes, then sprinkled with crumbled fetta cheese. Ingredients
2.5kg Piece seedless watermelon
200g Qukes, thickly sliced
½ Cup loosely packed mint leaves
150g Greek fetta
2 tbs raspberry or sherry vinegar
2 tbs olive oil
Dressing:
1/3 cup olive oil
2 tbs raspberry or sherry vinegar
2 tsp Dijon mustard
2 tsp Maple syrup
Preparation
Remove the rind from the watermelon and cut into 2.5cm cubes. Place into a large serving bowl.Â
Add the qukes and mint. Stir gently to combine. Crumble the fetta over the salad.Â
Whisk the vinegar and oil together until well combined, season with pepper and spoon over the salad just before serving.
