About the Recipe

The Watermelon, Qukes, and Fetta Salad is a refreshing blend of juicy watermelon, crisp Qukes, and creamy Greek fetta. The salad is tossed with fresh mint leaves for an added burst of flavor. The watermelon is cubed and mixed with thickly sliced Qukes, then sprinkled with crumbled fetta cheese. A homemade dressing made from raspberry or sherry vinegar, olive oil, Dijon mustard, and maple syrup is whisked together and drizzled over the salad just before serving, giving it a tangy sweetness that perfectly complements the fresh ingredients. With a prep time of just 15 minutes, this salad is perfect for a quick, healthy, and flavorful side dish or light meal.

Ingredients

  • 2.5kg Piece seedless watermelon

  • 200g Qukes, thickly sliced

  • ½ Cup loosely packed mint leaves

  • 150g Greek fetta

  • 2 tbs raspberry or sherry vinegar

  • 2 tbs olive oil


Dressing:

  • 1/3 cup olive oil

  • 2 tbs raspberry or sherry vinegar

  • 2 tsp Dijon mustard

  • 2 tsp Maple syrup

Preparation

  1. Remove the rind from the watermelon and cut into 2.5cm cubes. Place into a large serving bowl. 

  2. Add the qukes and mint. Stir gently to combine. Crumble the fetta over the salad. 

  3. Whisk the vinegar and oil together until well combined, season with pepper and spoon over the salad just before serving.
